Green Gnocchi

Brazilians are pretty superstitious and have series of “”simpatias”” or little rituals that they believe bring them good luck. On the 29th of every month, there is an opportunity to will good fortune for the coming month, and all you have to do is eat gnocchi. Worth a try right?

For the fortune to work, you must place a bill of any currency or amount under your plate. Then you separate and eat 7 individual gnocchi’s while making 7 wishes. When done, enjoy the dish and save the bill.

If, like me, you have work, kids, and life and can’t roll your gnocchi from scratch, I have a quick recipe for getting your good fortune in. We use pre-made gnocchi, and instead of boiling them, we will roast them alongside veggies for a sheet pan hands-off meal that doesn’t involve much work. I also took an extra shortcut today and used store-bought pesto. Choose pesto that is fresh (from the refrigerated section) and check the ingredients to make sure it is made with olive oil and not canola for the best flavor.

Ingredients

Broccolini
Mushrooms (Shitake or Trumpet)
One package of dry or fresh refrigerated gnocchi
Olive Oil
One container of pesto (or about 1/2 cup homemade)
Arugula
One Lemon
Salt
Pepper
Parmesan Cheese

Servings: 3

Time: 30 minutes

Steps

  1. Preheat the oven to 450 degrees

  2. Cut your broccolini into small bite-size pieces trimming any leaves.

  3. Slice the mushrooms

  4. Spread the broccolini, mushrooms, and gnocchi on a sheet pan; toss with enough olive oil to coat everything and season with salt and pepper

  5. Roast for 20 - 25 minutes

  6. Meanwhile, dress your arugula in lemon juice and season with a dash of pepper

  7. When browned, transfer the gnocchi and veggies to a bowl and toss with the pesto

  8. Top with arugula and grated parmesan

Serving Suggestion

Serve with a lucky bill under your plate, and an Italian white wine in your glass. Buona Fortuna!
