Practical Pão de Queijo

Equipment
Muffin Pan or Silicone Muffin Cups
Ingredients
1/2 cup of Monterey Jack cheese, grated
2 eggs, beaten
1 tablespoon olive oil
2 tablespoons of ricotta
1 cup of tapioca starch
1/2 tsp salt
Cooking spray or extra oil for coating muffin tins
Servings: Makes 8
Time: 5 minutes active time + 20 minutes in oven
Steps
Mix all ingredients in a large bowl
Coat your muffin tins with cooking spray
Divide mix into 8 muffin cups
Bake at 400 degrees for 15 - 20 minutes until golden
Serving Suggestion
With an espresso for a perfect afternoon snack.
