Practical Pão de Queijo

This is a recipe from my friend and tablescape muse Lavina Francesca. View our video for setting the perfect brunch table here. This recipe, of course, is a must have for any Brazilian’s brunch.

 
 

Equipment
Muffin Pan or Silicone Muffin Cups

Ingredients
1/2 cup of Monterey Jack cheese, grated
2 eggs, beaten
1 tablespoon olive oil
2 tablespoons of ricotta
1 cup of tapioca starch
1/2 tsp salt
Cooking spray or extra oil for coating muffin tins

Servings: Makes 8

Time: 5 minutes active time + 20 minutes in oven

Steps

  1. Mix all ingredients in a large bowl

  2. Coat your muffin tins with cooking spray

  3. Divide mix into 8 muffin cups

  4. Bake at 400 degrees for 15 - 20 minutes until golden

Serving Suggestion
With an espresso for a perfect afternoon snack.
